Creamy Chicken Sausage and Sun Dried Tomato Chickpea Pasta
In a large skillet heat oil on medium to high. Add garlic and cook for one minute until fragrant.
Add in chicken sausage. Cook until browned - about 8 minutes.
Meanwhile, cook pasta according to directions on the box.
Add mushrooms and sun dried tomatoes to the pan. Add the rest of the sun dried tomato oil. Cook for 6-8 minutes.
Add chopped spinach and stir.
Add chicken broth and coconut cream. Stir and simmer for 2 minutes. Whisk in arrowroot powder. Simmer for 5 minutes. Sauce will thicken.
Stir in spices.
Add the pasta to the pan. Stir in basil and Parmesan cheese. Enjoy!
