Mexican Turkey and Kale Bowl with Cilantro Lime Sauce

For the Bowls
 1 lb Ground turkey
 1 Yellow bell pepper, diced
 1 Yellow onion, chopped
 4 cups Kale, chopped
 2 cups Cilantro lime rice
 1 tbsp Garlic powder
 1 tbsp Chili powder
 1 tbsp Cumin
 1 tsp Salt
 1 tsp Black pepper
 ½ cup Water
 3 tbsp Olive oil
 2 Garlic cloves, minced
 1 Avocado, sliced
For the Sauce
 ¼ cup Mayo
 1 cup Cilantro
 ½ cup Olive oil
 1 Juice of a lime
 ½ cup Crumbled fresca cheese
 Salt and pepper to taste

In a large sauté pan, cook ground turkey until brown. Drain grease and set aside.

Using the same sauté pan, add 1 tbsp olive oil, garlic, onions and peppers. Sauté on medium heat for 5 minutes.

Add ground turkey back to the pan with peppers and onions.

Add cumin, garlic powder, chili powder, salt and pepper to the mixture and stir well.

Add 1/2 cup of water to the pan and cook on low to medium for 10 minutes or until onions and peppers are tender.

Meanwhile, cook cilantro lime rice using instructions on the packet/box.

For the Sauce, add all ingredients into food processor and blend until mostly smooth.

To plate, place chopped kale in a bowl. Add ground turkey, onion and pepper mixture, rice and sliced avocado. Top with cilantro lime sauce and a drizzle of olive oil and lime juice. Enjoy!
