Italian White Bean and Tomato Salad

My husband Nate and I love Italian food. There is one specific Italian restaurant that we love in Charlotte called Mezzonote. It’s right across from the church we got married in.

They bring these amazing Italian white beans to the table with bread as an appetizer. We always had to ask for seconds because the bowl they serve them in is way too small in our opinion! 😉

We couldn’t get enough of them, so I decided to try and recreate them at home!

This recipe is so quick and easy and is a great way to start any at home Italian feast.

Yields4 Servings

 1 Can great northern beans
 1 cup Cherry tomatoes, quartered
 ½ cup Red onion chopped
  cup Olive oil
 1 tsp Garlic salt
 1 tsp Black pepper
 1 tsp Onion powder
 1 tbsp Dried oregano
 1 tsp Dried or fresh parsley for garnish

Drain and rinse the beans.

Chop the red onion and tomatoes.

Combine all ingredients in a bowl and mix.

Serve with Italian bread. Enjoy!
