Easy Kale Salad
This salad is a staple in the Grove household. The reason for that is because it’s a great side that goes with any type of meal. I sometimes swap out the pomegranate seeds for blueberries and the pumpkin seeds for pine nuts -whatever you prefer.
To turn this salad into a full meal, just add grilled chicken or seared salmon filet on top.
Wash and chop kale - removing the hard stems.
Combine kale, goat cheese, pomegranate seeds and pumpkin seeds in bowl.
Drizzle Olive oil and balsamic vinegar over salad.
Add garlic salt and black pepper.
Toss and serve.
