Dijon Panko Crusted Salmon
I am and always have been a huge fan of salmon. I like it because its not too “fishy” of a fish. Therefore, we tend to eat it often. I always try to get creative with different ways to eat salmon and I think this one is a winner!
It’s pretty simple and not too many ingredients which is a plus! It’s crispy on the outside and soft and flaky on the inside.
Here are some of the items that I used for this recipe.
Preheat the oven to 400 degrees.
Heat olive oil in a cast iron skillet over medium to high heat for about 5 minutes.
Whisk together egg, Dijon mustard, garlic powder, salt and pepper.
Coat salmon in egg and mustard mixture then coat salmon in the breadcrumbs.
Once oil is hot, place salmon filets in oil. Sear for 2 minutes on each side.
Transfer skillet to oven and bake for 7-8 minutes.
Garnish with parsley. Enjoy!
