Cajun Chicken Sausage and Veggie Sheet Pan
One of my go to dinners when I am in a time crunch are sheet pan meals. They are perfect because you can just throw ingredients onto a pan, season and bake.
This is one of those meals for you that brings a lot of spice! If you have kids or aren’t a huge fan of spicy food, remove the red pepper flakes and only use half of the paprika. This should tone it down a bit.
Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
Dice the chicken sausage, bell peppers, yellow onion and sweet potato and place onto a sheet pan.
In a small bowl, mix the spices. Toss onto the veggies and chicken sausage and mix well so that everything is evenly coated.
Drizzle 2 tbsp olive oil onto the sausage and veggies and stir.
Bake for 25 minutes.
Remove the pan from the oven and stir. Add the kale.
Bake for another 8-10 minutes.
Serve over brown rice, cauliflower rice or quinoa. Enjoy!
