Beef and Cheese Taquitos
Growing up, we used to eat frozen taquitos, which don’t get me wrong – they are GOOD. But, I decided it’s time to make them homemade, and I am so glad that I did! This is a family friendly meal that adults and kids will love.
Keep in mind – I used medium size tortillas for mine. The bigger the tortilla you use, the bigger your taquito. If you plan on making these for an appetizer, using larger tortillas would make sense in order to cut them into smaller pieces.
Other proteins or options to use instead of shredded beef:
- Shredded chicken
- Rotisserie chicken – This makes it even easier and requires no prep
- Ground turkey
- Tofu or Tempe
- Vegetables -mushrooms, onions and peppers
If you can’t find avocado oil spray, you can just use a olive oil spray instead.

Pour water into the bottom of a crock-pot. Place beef chuck into water. Combine spices and rub onto beef. Cook on low for 6-8 hours. Once cooked, shred beef.
Preheat the oven to 400 degrees. Line a baking sheet with parchment paper.
To fill tortillas, place beef and cheese on one end of the tortilla. Roll and place on baking pan with seam down. Spray all taquitos with avocado oil.
Bake on 400 for 8 - 10 minutes.
Take taquitos out of the oven. Turn oven to broil. Top each taquito with a sprinkle of leftover shredded cheese.
Broil for 1 min and 30 seconds or until golden brown and crispy.
Serve with guacamole and and top with cilantro lime sauce.
