Baked Mac and Cheese
This past Memorial Day weekend, I realized that I have never made a baked mac n cheese… ever! It’s always one of my favorite sides to order at BBQ restaurants and we grill out and make BBQ quite a bit in this house. Baby back ribs were on our menu, so the mac n cheese was the perfect addition to the meal.
My brother in law and his fiance were visiting us for the weekend , so I thought it would be the perfect time to create my own baked mac n cheese recipe. I always have to take advantage of new taste testers besides my hubs! 😉
Preheat the oven to 400 degrees. Grease a baking pan with cooking spray and set aside.
Cook the pasta a minute or two shy of al dente according to the package instructions. Once pasta is cooked, strain and set aside.
In a medium sauce pan, add butter, evaporated milk, almond milk, cheddar cheese, swiss cheese and ricotta cheese. Stir and cook on low to medium heat.
Add garlic powder, salt and pepper to the cheese mixture and stir. Stir until cheese is fully melted and blended together.
Add the pasta to the cheese mixture and stir.
Pour mixture into greased baking pan. Top with panko bread crumbs, Italian seasoning, and Parmesan cheese.
Bake for 25 minutes.
Turn the oven to broil and broil for 1 minutes 30 seconds or until golden brown.
Serve and enjoy!
